Delectable Greek Salad

(Recipe serves 6-8)

The Salad

6 Vine-ripened tomatoes
3 Cucumbers
1 Red capsicum (Bell pepper)
1 Sweet/mild onion (Aussie Mild or Videlia) cut in thin rings and halved. A red onion can be used as well for colour and a stronger flavour.
250 gr Kalamata olives
Fresh dill and mint to taste, finely chopped (a few tablespoons of each should suffice)
Dried oregano (about 1.5 tbsp)
Sea salt
Extra virgin olive oil
Feta cheese


  • Coarsely chop all the vegetables and toss together with the sliced onions, dill, mint and dried oregano.
  • Dress with olive oil and salt. Add more fresh herbs and oregano if desired.
  • Top with feta cheese.
