Delectable Greek Salad
(Recipe serves 6-8)
6 Vine-ripened tomatoes
1 Red capsicum (Bell pepper)
1 Sweet/mild onion (Aussie Mild or Videlia) cut in thin rings and halved. A red onion can be used as well for colour and a stronger flavour.
250 gr Kalamata olives
Fresh dill and mint to taste, finely chopped (a few tablespoons of each should suffice)
Dried oregano (about 1.5 tbsp)
Extra virgin olive oil
- Coarsely chop all the vegetables and toss together with the sliced onions, dill, mint and dried oregano.
- Dress with olive oil and salt. Add more fresh herbs and oregano if desired.
- Top with feta cheese.
