Smokey Onion Dry Rub for Beef

3 tbsp Onion flakes, dehydrated
2 tbsp Salt, smoked
2 tbsp Hot pepper flakes
1 tbsp Black peppercorns, whole
1 tbsp Fennel seeds, whole
1 tbsp Onion, dry granulated
1 tsp Smoked paprika
1 tsp Brown sugar
Method:
- In a dry frying pan, heat the peppercorns and fennel until they begin to smoke. Remove them from the heat and allow them to cool.
- In a mortar and pestle, crush the peppercorns, fennel and onion flakes until coarsely crushed.
- Combine all ingredients thoroughly and use as a rub on your favourite meat. It’s especially good on beef!
